It would actually be interesting to know more about Applejack's childhood and her parents. We know they died, but it would be cool to find out more about that. We would be able to know a little more about Applejack.

Maybe not another entire episode about all their childhoods, but I wouldn't mind seeing a short flashback of a character's childhood as part of the episode (e.g. they did this in "Hurricane Fluttershy"). It all depends on whether or not it is needed for the storyline.
