Undertaker from Kuroshitsuji Question

What is the Undertaker in the manga?

In the manga chapter 59, the Undertaker goes all bad-ass and stuff, but he doesn't seem like a Shingami like he is in the anime. He refers to Grell as a Shingami and has weapons, but isn't wearing glasses and doesn't have his Death Scythe from the anime. I'd like to know if anyone who's read the manga knows what species he is.
