He was raised by wolves, he spared Snow's life, his heart was taken, he helped Charming escape from Regina's place, he was emotional tortured by Regina for twenty-eight plus years, he fell for Emma, hedied shortly after becoming the first person to remember his Fairy Tale life. If it weren't for them there wouldn't be any story. So, how on earth is he not interesting?

@afirewiel: It's called an opinion... Most of the time you see him being insecure and uncertain about himself anyway. I believe the only reason people like him so much is because he's a potential Emma love interest.
