He grew up completely in 2nd part of Breaking dawn book. There he changed his beliefs and started to fight for them. He forms the pack and becomes the Alpha which brings a lot of responsibility. He fights for vampires and human. He changes his relation with Leah. He imprints.

I think he did, but not that much. Maybe with things that didn't have to do with Bella, like school/learning? *shrug*
^ But like nessie-eska said, he did grow up in Book 2 of Breaking Dawn. Imprinting was the thing that changed him 100%.

He started growing physically in New Moon, I guess. He didn't really become "mature" until Breaking Dawn. His mentality eventually caught up to his body, but it was a bit delayed.
