Assuming Sookie and Eric hit the sheets again, do toi think Eric's sexual behavior will be different since his memory is now restored?

I agree with you! There was a huge, noticable difference in Eric after he got his memory. Sure, he had a bit of an adge--but that's just part of the package that is Eric (I'm glad that he got it back--I think it's sexy. Gotta l’amour the bad boy!). Like Eric said, the other Eric is still in him, he's just plus now. He loves Sookie and I think, in many ways, he's plus emotional than Bill. It's almost like loosing his memory made him wake up and embrace what he was feeling for Sookie. Furthermore, Bill and Eric are so different, it would only make sense that Eric's sexual behaivor would differ greatly from Bill's.
