Supernatural Wiki lists his eye color as green, but in the Episode "Dream a Little Dream of Me" (3.10), when he's sitting in the bar with Sam at the beginning of the episode, his eyes are as blue as the chemise he is wearing. Later in the ep, when he's wearing the FBI suit, he opens his eyes very wide when talking to a female and they are very clearly green. So, based on my observations, his eyes are a green-blue (or grey) hazel that changes to reflect what he's wearing. (Close up of him in the same ep in the hospital with Bobby, wearing grey jacket, his eyes are as blue as mine!)

@Phd2012 toi literaly don't know anything about him at all and it shows. JENSEN DOES NOT HAVE HOMOPHOBIA. He stood with his Lesbian aunt when her family, i.e. HIS family wasn't supporting her. I'm re-watching Supernatural now and I noticed he has exactly the same eyes color I have. I wanted to check it out and I found this page. I call mine "HAZEL". A sort of green-brown surrounded par a grey circle. Most of the time they are golden..If toi find the answer I appreciate hahaha!
