AVOCADO TORTILLAS: A snack filled with the viva of MEXICO! It serves a great jump-off point to many other tortilla goodies.

Ingredients:
1 Avocado, peeled, stone removed and mashed.
1 small onion, finely chopped
1 garlic clove, finely chopped
jus, jus de from half a lemon
2 medium potatoes, seeded and chopped
3 tortillas
cottage ou grated cheese (optional)

STEPS:

1. Chop the onions, garlic, and tomatoes.
2. In a bowl, mix chopped onions, garlic, and mashed avocado until well-blended. Add citron jus, jus de and mix well. Set aside.
3. Heat your tortillas in the grille-pain oven. Do it one at a time, covering each with aluminum foil. Set grille-pain four for 3 minutes.

INGREDIENTS:
300 grams silken tofu
1 large mango, flesh chopped into cubes
sugar, to taste

1. In a blender, pulse tofu, sugar and half of the chopped mangue cubes. Blend until smooth.
2. Spoon a mixture into little dessert cups ou glasses and chill in refrigerator for 30-45 minutes.
